Moromi Maitake Soy Sauce is brewed from hand-harvested locally grown organic mushrooms. These are blended with organic soybean and wheat koji into a sea salt brine and then barrel fermented at Moromi's brewery for over a year. The maitake mushrooms really amp up the umami flavor resulting in a super rich and delicious soy sauce!
